Soy Sauce

Brown Sugar

Worcestershire Sauce

Garlic

Hot Sauce

Honey

Chopped Onions

 

What I did was I mixed all these ingredients and marinated Turkey Drumsticks. I put it into a 325 degree oven for 1 1/2 Hrs. BUT you can use this marinade for chicken, meats, or pork I suppose. It is VERY good.

Banana Bread

1 stick- Butter (room temp)

1C- Sugar

1/2 Tea-Salt

2ea- Eggs

1T- Banana Extract

3 ripe Bananas, mashed

Put all in a bowl and beat with an electric mixer until everything is well blended.

1 1/2 C- AP Flour

1 tea- B. Soda

1 tea- B. Powder

1C- Pecans (optional- I suppose you could you craisens, chocolate chips, coconut, or any other type of nut)


Add all these ingredients BY HAND until incorporated. The batter will be fairly loose.

350 degrees in a greased loaf pan for 50 minutes.

The closest recipe to my Italian mother in law's.... This is not for the budget conscious. I made this for my holiday dinner AND I have about 3 large containers of sauce and meats that are in my freezer. I also have enough leftovers for lunch and dinner today. This makes A LOT OF FOOD!

 

2T- Olive Oil

1#- Meaty pork neck bones or spareribs

1#- Veal stew meat or 2 veal shoulder chops

1#- Italian style pork sausages

4ea- Garlic cloves

¼ C- Tomato paste

Three, 28- 35oz cans Italian peeled tomatoes

2C- Water

Salt & Ground pepper

6ea- Basil leaves, fresh

 

For the Meatballs:


1#- ground beef/pork combo

½ C- Bread crumbs

2ea- Eggs

1tea- minced garlic

½ C- Pecorino Romano

2T- Flat leaf parsley, chopped fine

1tea- Salt

Ground pepper

2T- Olive oil

 

 

To make the sauce, heat the oil in a large heavy pot over medium heat. Pat the pork dry and put the pieces in the pot. Cook, turning occasionally for about 15 minutes or until nicely browned on all sides. Transfer the pork to a plate. Brown the veal in the same way and add it to the plate.

Place the sausages in the pot and brown on all sides. Set the sausages aside with the pork.

Drain off most of the fat from the pot. Add the garlic and cook for about two minutes or until golden. Remove and discard the garlic. Stir in the tomato paste and cook for 1 minute.

With a food mill, puree the tomatoes with their juice into the pot. Or, for a chunkier sauce, just chop up the tomatoes and add them. Add the water and salt and pepper to taste. Add the pork, veal, and sausages and basil and bring the sauce to a simmer. Partially cover the pot and cook over low heat, stirring occasionally for 2 hours. If the sauce becomes too thick, add a little more water.


Meanwhile make the meatballs.

 

Combine all the ingredients except the oil in a large bowl. Mix together thoroughly. Rinse your hands with cool water and lightly shape the mixture into 2 inch balls. Note, if you are making meatballs for lasagna or baked ziti. Shape the meat into tiny balls the size of a small grape.

Heat the oil in a large heavy skillet. Add the meatballs and brown them well on all sides. They will finish cooking later. Transfer the meatballs to a plate.


After two hours add the meatballs and cook for 30 minutes or until the sauce is thick and the meats very tender.

To serve, remove the meats from the sauce and set aside. Toss the cooked pasta with the sauce. Sprinkle with cheese. Serve the meats as a second course or reserve them for another day

Here are one of the things that I'm going to make for my holiday dinner... This is a GREAT salad recipe!!

My favorite Salad

 

½ head iceberg lettuce

2ea- tomatoes cut into eighths

2ea- celery stalks

½ C- Swiss cheese, julienne

½ C- Ham, julienne

2tea- Romano cheese

 

Dressing

1/8 C- White wine vinegar

½ C- Olive Oil

4ea- Garlic cloves, minced

1tea- Worcestershire sauce

salt & pepper

1tea- oregano

2tea- lemon juice

 

Mix garlic, oregano, and Worcestershire sauce in a bowl. Beat until smooth with a wire whisk. Add olive oil, gradually beating to form an emulsion. Stir in vinegar and lemon juice and season with salt and pepper. Add dressing to salad and toss well. Add Romano cheese and toss one more time.

Super moist (not heart healthy though) Meatloaf

Ground Beef

Eggs

Leftover pasta sauce

Garlic

Parsley

Basil

Oregano

Minced Onion

Ground Pepper

Cheese (I used the grated stuff)

Italian flavored breadcrumb mix

and- Bacon

 

Mix & form into loaves-- 350 degrees for 30 minutes.

Apple Bake

Today I tried a recipe that I really liked.

Sliced Apples- in a layer at the bottom of a greased pan

Combine the following in a bowl into a crumbly mixture and then sprinkle on top of the apples:

1C- Flour

1C- B. Sugar

Cinnamon

1ea- Egg

Finally melt 1 stick of butter or 1/2C of butter and pour that over the crumbles & apples.
Pop in a 350 degree oven for 30 minutes.

*You can add craisens, nuts (I use pecans), or coconut

*You can serve this plain, heated with whipped cream OR ice cream
